What is The Fermentation Project?

Two personalities well known in the world of specialty coffee, Lucia Solis and James Hoffmann, have teamed up to create the Fermentation Project to collectively explore how controlled fermentation affects coffee flavor.

We are proud to be part of a few roasters worldwide, which have been selected to participate in this exciting opportunity!

This tasting set features four distinct fermentation methods, all applied to the same lot of coffee from Finca San Miguel Urias, Antigua Guatemala. All other variables being equal, the project isolates the impact of fermentation alone, providing a unique opportunity to experience how processing influences the final cup.

What’s Included:

Each set includes 50 grams of each of the following coffees + a free cupping spoon: 

  • Mechanically Demucilaged (no fermentation): serve as the control (witness)
  • Wild Fermentation: Fermented for 48 hours with local wild microbes.
  • Lactobacillus Inoculated: enhances the production of organic acids, impacting the brightness and complexity of the coffee. 
  • Yeast Inoculated: enhances the production of flavor precursors, impacting the body and complexity of the coffee.
